Many people think that there must be preservatives used in canned tuna to give it its long shelf life, but that’s not the case. No chemicals are added to make sure the tuna doesn’t spoil.
Once canned, the fish is placed in a special cooker that super-heats the cans to a very high temperature under pressure. The tuna ends up vacuum-sealed and sterilized in the can due to this process, and that’s what gives it its shelf life and the ability to remain safe to eat while stored at room temperature.

You don’t want to leave opened tuna out for more than two hours because that’s when bacteria can begin to form. When refrigerating, use a glass or plastic container with a tight-fitting lid. You do not want to refrigerate the leftovers in the can because it can begin to rust once left open.
Tuna can remain good in the fridge for up to two days if it’s kept in a tightly sealed container.

By the middle of the 20th century, fishing became an industrialized process as demand grew for more affordable, protein-rich foods. These mass-produced fishing operations took over an industry that had been dominated by local fishermen.
While the availability of fish for the consumer grew, it had a terrible impact on the world's oceans. It was estimated in 2003 that the number of large ocean fish was just 10% of what it was less than a century prior.
In 2006, scientists said that by 2048, all of the world's fisheries would collapse if things continued at the going rate.
Since then, there is some reason for hope due to new fishing methods. The World Wildlife Fund estimates that 61% of the world's fish stocks are fully fished, compared to 29% overfished and 10% underfished.

At the turn of the 20th century, no tuna of any kind was eaten in the U.S. In fact, seafood in general wasn't nearly as popular as it is today. It's estimated by the U.S.D.A. that the average American ate seven pounds of fish per year in 1910, compared to 60 pounds of beef, 60 pounds of pork, and 15 pounds of chicken.
Two Innovations Changed the Game for Tuna
With tuna weighing around 40 pounds, it was difficult for fishermen to catch the fish. But new technology allowed for larger fish to be caught by easier means, and a new way of removing the excess oil found in these types of fish was also a game-changer.
This kept the taste and smell of seawater out of the fish, allowing food manufacturers to can a product that was closer to chicken than seafood.
Early marketing for canned tuna boasted that it tasted like chicken, and in fact, one of the first mass producers of tuna named itself exactly that in 1914: Chicken of the Sea.

What Does Sustainable Seafood Mean?
Sustainable seafood is caught or farmed in ways that will not deplete the oceans or waterways, will not harm the future of that species, and will also keep the economies of fishery-dependent communities afloat.
Because of these methods, many sustainable fish are high in protein, vitamins, minerals, and healthy fats like omega-3s and contain lower amounts of harmful chemicals.
Why is Pole-and-Line Caught Fish Best?
Just as it sounds, each fish is caught individually by a fisherman using a pole and line like you might use. This method uses no nets, which can cause what's called bycatch.
Bycatch is marine life scooped up by commercial fishing nets that are caught alongside the fish that are trying to be harvested. Even though these fish, which can include dolphins, whales, birds, and turtles, are tossed back into the sea by fisherman, it's estimated that bycatch kills around 300,000 marine animals annually. By catching each fish individually, the problem of bycatch is eliminated.

Typically, all types of canned tuna will have lower levels of mercury than tuna steaks and sushi, as smaller tuna are used for canned products.
This is especially true for FinerFin's tuna, as we only source pole- and line-caught tuna. These tuna caught at the surface are not only smaller but younger as well. Mercury content in tuna increases with the age and size of the fish, so by using only younger and smaller tuna, we can ensure that the levels of mercury are low and will not be harmful over time.
Albacore (white) tuna also tends to be higher in mercury content, and FinerFin does not use that kind of tuna in its products.
Why Is Mercury in Tuna a Concern?
