Avocado Salad Rice Cake open sandwich

In a large mixing bowl add all the ingredients and mix with a fork mashing the avocado and egg until well combined.
Spread half of the avocado salad on each rice cake patty and top with the Zesty Lemon FinerFin Tuna. Enjoy right away!
Tips: for a “to go” option you can make the avocado salad a day or two ahead and keep in the fridge in an air tight container.
