INGREDIENTS:

Salad

  • ½ cucumber diced
  • 1 cup sweet tomatoes (halved)
  • 1 tbs olive oil
  • 1 tbs lime juice
  • 2 tbs chopped parsley
  • Salt and pepper to taste

Tahini sauce

  • 1/8 cup tahini
  • 1 clove garlic
  • 1 tbs lime juice
  • 2 tbs water
  • 1 tbs olive oil
  • Salt and pepper to taste

Toppings

  • 1 cup cooked quinoa
  • 2 tbs feta cheese
  • 1 can of FINERFIN 3 Bean Tuna meal

WATCH HOW WE PREPARED THIS

INSTRUCTIONS:

For the cucumber salad add all ingredients and combine. Reserve

For the tahini sauce add all ingredients into a blender and blend until smooth. Reserve.

Cook the quinoa per package instructions and season to taste (let it cool).

Build the bowl by adding quinoa to the bottom half, add the cucumber salad to the side. Top with the FINERFIN 3 Bean Tuna meal, and the feta cheese. Drizzle with Tahini sauce and enjoy!
